The other piece of important background is some biology.

The CHON elements form the basis for nearly all biological compounds:

We define organic molecules as compounds that contain carbon. These compounds often also contain hydrogen, and sometimes oxygen and nitrogen, or possibly other elements.

We'll talk about the details of these biological compounds in a couple of weeks; for now, just focus on the amino acids.
