Phospholipids are interesting because of their behavior in water.

The tails of phospholipids are hydrophobic. Remember the demo we did in class where we tried to mix oil (which is just C-H) with water.

The heads of phospholipids are hydrophilic. This is because it has positive and negative charges within the molecule. Remember mixing alcohol with water.
